How to dry tilapia with fish dehydrator?

1. The first stage of tilapia drying is set at 26 ± 2 ℃, humidity 10%, drying for 4 hours. Select the mode of constant temperature & dehumidification till the end of drying.
2. The second stage is set the tamperature at 30 ± 2 ℃, humidity 35%, drying for 3 hours.
3. The third stage is set the tamperature at 35 ± 2 ℃, the target humidity is 30%, drying for 2 hours.
4. The fourth stage is set the tamperature at 40 ± 2 ℃, the target humidity is 20%, drying for 4 hours.
5. The fourth stage is set the tamperature at 50 ± 2 ℃
, the target humidity is 10%, drying for 4 hours.

8 kilograms of tilapia were dried after 18 hours to obtain 4 kilograms of dried fish. Its moisture content is 58.7% before drying, and after drying it drops to 30.74%, which is semi-dry and will taste better than full dry.

The temperature of tilapia in the first stage of drying should not exceed 40-45 degrees, which is not easy to crust. The drying process of tilapia drying is generally low-temperature dehumidification. In the early stage, low temperature shall be used to let the internal water out slowly, so as not to form crusts on the surface. In the later stage, it can be heated slowly until its drying degree meets the requirements. In the drying process, it is necessary to drain the moisture in time to avoid the taste change of the fish. Tilapia dryer is also suitable for baking golden pomfret, sea cucumber, oyster, eel, abalone and other seafood.
