How to dry mango slice with SIBIONO mango dryer machine

 
Before drying:
1. Selection of materials: choose the mango with small nucleus and full flesh, ripeness to 8 to 9 become appropriate. If the mango is not ripe enough, the color and flavor of the mango is poor; too ripe is easy to rot.
2. Washing: wash the mangoes by hand or washing machine, after cleaning, leave to drain.
3. Peeling: the outer skin must be removed, because the peel contains more tannins, such as not cut, easy to produce browning in the processing process, affecting the color of the finished product.
4. Slicing: peeled fruit with a sharp blade longitudinal slices, the thickness of about 0.5-2cm.
5. Color protection: the cut mango slices should be immediately put into the sugar water soaked with color protection solution (without using sulfur dioxide as a color protector, it can achieve the purpose of color preservation, flavor preservation and corrosion protection).

Drying programme setting:
1. Set the temperature to 50±3°C, the humidity to 10 and the duration to 1 hour. Adopt drying + dehumidification mode, in which the dehumidification mode needs to be turned off for 10 minutes after 3 minutes of opening, and so on until the end of this stage, otherwise it will easily lead to over-drying of mango slices.
2. Set the temperature to 55±3°C, the humidity to 10 and the duration to 4 hours. Select the drying + dehumidification mode, in which the dehumidification mode needs to be closed for 10 minutes after opening for 4 minutes, and so on until the end of this stage.
3. Set the temperature to 60±3°C, the humidity to 10 and the duration to 4 hours. Select the drying + dehumidification mode, in which the dehumidification mode needs to be closed for 10 minutes after 4 minutes of opening, and so on until the end of this stage.
4. Set the temperature to 65±3°C, the humidity to 10 and the duration to 8 hours. Select drying + dehumidification mode, in which the dehumidification mode needs to be turned off for 10 minutes after opening for 4 minutes, and so on until the end of this stage.


 

 
Results of drying mango with food drying oven
 
 
Drying mango with SIBIONO fruit hot air dryer, the weight of 1.5kg mango after drying is 0.2kg, and the moisture is reduced from 77% to 2.6%. The color of dried mango can be well maintain and the softness is moderate.

Tips for drying mango:

1. The thickness of mango slice is 0.5cm, 1cm, 1.5cm and 2cm.
2. The ripeness of mango id 70%, 80% and fully ripe.
3. With the thickness of 0.5cm, the shape and color after drying are the best. No foaming, curling and sugar precipitation.
4. Dried fully-ripe mango slice are prone to foaming and more sugar precipitation.
